Abstract

QUINTERO-SALAZAR, Baciliza et al. Consumption and knowledge of a traditional fermented drink in Ixtapan del Oro, México: the sambumbia. Alteridades [online]. 2012, vol.22, n.44, pp.115-129. ISSN 2448-850X.

This article deals with some issues on the consumption, preparation and current relevance of sambumbia, a traditional fermented drink known since XVIII century in three communities in Ixtapan del Oro, State of Mexico. Using ethnographic technics, we managed to document the current sambumbia consumption in the studied communities. However, the knowledge on its process of production is most rooted in San Martín Ocoxochitepec, a community where the community council has played a key role to maintain its consumption until the present.

Keywords : zambumbia; traditional fermented drinks; Indigenous drinks; process of production; gastronomy.
