Abstract

In recent years there has been a mixed picture for genuine Mexican cheeses, while some have managed to grow in the market, others present a gradual process of disappearance. The above reflects the fact that although the macroeconomic outlook and the regulations are the same for all the cheese, there are territorial dynamics are making a difference in their competitiveness. With the intention of identifying some causes that are affecting its development and evolve into the design of strategies that stimulate their rescue and recovery from a territorial perspective, in this research used network analysis.
