The aim of this research was to characterize the elements of study of education for healthy eating in primary school. This was to establish a basis for research in the school context and develop best inclusive educational practices involving students, teachers and the community. The case study was conducted by a participant observation through a workshop with axes in education for food and sustainability made over the course of a semester in a multigrade rural school. Elements to be considered for healthy eating in primary school education were identified: the link between the preparation of the school breakfasts and educational processes, transverse directions with environmental education and sustainability as well as urgent reconfiguration of the conceptual, procedural content and value.
