The objective of this study was to characterize pork consumers in the Metropolitan Area of the Valley of Mexico, in order to know the type of products and other integrated services demanded according to their income level. The methodology used was custom tables for quantitative and economic-social variables segmentation, and conducted tests of association between variables with X2 distribution. A statistical survey was made applying semi structured questionnaires to 440 individuals. The main results showed that low income and consumption are positively correlated with the types of steak, product freshness, point of sale and number of slices acquired. The number of services added to the meat showed no significant relationship with consumption and income. It is concluded that low and middle income consumers demand popular steak cuts (chop, steak, backbone, loin, leg and other parts), so as mainly consumed fresh and purchased in public markets and butcher shops within the neighborhood.
