Resumo

The aim of this study was to determine the introduction of industrialized modern food in the habitual diet of two Mayan communities of Yucatan, Mexico, as well as some factors, on both the community and the home level, which may explain this incorporation. This transversal study is conformed of 51 families selected through systematic sampling without replacement. The information was obtained from a structured interview that included socioeco-nomic variables, habitual diet, frequency of food consumption, economic activities, availability of food and governmental assistance. Parametric statistical tests were used to identify differences between communities and families with regard to the consumption of industrialized modern food. The results demonstrate the consumption of modern industrialized food in the habitual diet of both communities without significant differences at this level, but differences were registered at the home level. The role of emigration and social programs in the incorporation of industrialized modern food in the habitual diet of the Mayan homes of these communities is discussed.
