The aim of this study was to evaluate the biomass production, the kinetic growth parameters and the chemical composition of Lentinula edodes mycelia produced in submerged cultures supplemented with vineyard prunning extracts (aqueous, ethanol, chloroform and toluene). Strains IE-105 and IE-245 of L. edodes and three basic culture media were evaluated for the biomass production. The combination with higher production was chosen as control and used for the design of two treatments (T1: supplemented with four extracts, and T2: supplemented with aqueous and ethanol extracts). Biomass production was not significantly different (P>0.05) among treatments after 21 days of fermentation process. The maximum biomass production predicted by the logistic model was observed in T2 (16.57 g L-1), and the -1lowest in the control (10.78 g L-1). The µM for the control, T1 and T2 were 0.052, 0.146, and 0.133 days-1, respectively. The lower R2 was found in the control (0.86) and the higher in T2 (0.94). Differences were found (P<0.05) in the content of crude fat between control and T1, and in the amount of protein and total carbohydrates between treatments (T1 y T2) and control.
