This article seeks to analyze the culture of bakers' work in Mexico City in the late 19th century. It focuses on attempting to understand and explain the long continuity of manufacturing ­which extended from the colonial era until well into the 20th century­ as a form of organization of bakery production. Within this context, the author approaches the study of this means of production by defining and examining the working conditions entailed by manufacturing work, particularly the lengthy periods of confinement to their workplaces. Closely associated with the contracts that forced workers to spend a long time in the bakeries, the problems of alcoholism and the mechanisms for subjugating labor are of vital interest in understanding the problems owners and operators faced on a daily basis. Finally, the author examines the way other factors affected the severe labor conflicts which, expressed in strikes, mutinies and various outbursts of physical and verbal violence must also be understood in terms of the class, gender and ethnic issues that put their mark on the relationship between the bakery owners and their workers.
