Abstract

This article, with its economic environmental focus, seeks to provide a complete picture of the disposal of animal waste, starting with an analysis of the process and cost of the pollution associated with the slaughter of animals. Research for the article was carried out in 5 abattoirs across Yucatán, over a period of 10 months. This research analyzed a series of parameters regarding the quality of the residual water and supply wells. Other data collected were the quantity of water used, the number of animals slaughtered, existing infrastructure for the treatment of waste, and the potential by-products related to this infrastructure. Based on this data, models were constructed of some technical options for treatment, and the operation of these was empirically compared with present processes.

Results suggest that the situation in the abattoirs is very different from that on animal farms (specifically pig farms). Even though serious pollution problems exist in abattoirs, they have not reached the same levels as those on the farms. Both the use of water and the level of pollution in abattoirs are much less than on animal farms.

However, due to the type of waste generated in abattoirs, treatment costs are relatively higher, and the potential for using any by-products advantageously (thereby reducing the net costs of treatment) is much more limited.
