In the context of studies on the impact of diet changes on human populations and particularly the transition in the foods consumed by Mexico's indigenous populations, a study was conducted of a Totonac community in the Sierra Norte of Puebla, that had two objectives: 1) Describe the metabolic characteristics of the adult population (N = 236), through biochemical and anthropometric tests, which indicated that this population contained a relatively high percentage of individuals, whose laboratory results that did not fall within normal ranges. These were specifically those who were overweight or obese, who also had high levels of glucose, cholesterol and triglycerides, which were common among people from 30 to 50 years of age and could be related to an energy imbalance and metabolic disorders. 2) Approach the cases and ways the changes in diet, physical activity and health occurred, from the viewpoint of the community residents themselves. Therefore, an ethnographic study was carried out, which inquired into their diet, traditional forms of food consumption, changes in diet, lifestyle, current diet, desnutrition, obesity and diabetes, from which a detailed description of the most relevant elements in the change to their lifestyle was obtained.
