The aim of this study was to obtain the sensory characteristics of some commercial milk consumed in the city of Tuxtepec, Oaxaca, Mexico by a consumer panel , using the technique of categorization and statistical techniques, such as the FAST methodology (Factorial Approach for Sorting Task), WordCountAna and confidence ellipses, in order to generate the product map, identify consensual words that help describe milks, evaluate the effect of discrimination consumer panel and stability of the product map. Eight brands of commercial milk were evaluated, the results showed that it was possible to describe the major sensory characteristics of milk by the consumer panel, generating 209 words, of which the white and yellow colours and sour, sweet and salty taste were consensual, describing the characteristics main of the milks analyzed. The confidence ellipses revealed that the consumer panel was discriminating, generating map product stability and reliability in the results at p < 0.05.
