There is scarce study on factors affecting the quality of roselle calyxes (Hibiscus sabdariffa L.) during harvest and post-harvest management. In addition, the transition from flowering to fructification is gradual in this crop, causing calyxes of the first flowerings to be exposed to damages by biotic and abiotic factors. The objective of this work was to evaluate yield and quality of the calyxes of three varieties of roselle (UAN8, UAN6 and China) depending on unique harvest and continuous harvest. The following variables were evaluated: number of calyxes; calyx length; calyx fresh weight; calyx dry weight; pH; titratable acidity; total soluble solids; total coliforms; aerobic mesophilic bacteria; molds and yeasts. The analyzed harvest methods did not generate significant differences in yield variables. Of the three evaluated varieties, UAN8 showed the best calyxes yield. In continuous harvest, the calyxes had more acidic pH values, but a greater total soluble solids content. There was higher contamination of total coliforms and molds in the unique harvest, at the end of the cycle.
