This paper is the second stage of the project: “Evaluation of the quality of gastronomic tourism services in establishments of food and drinks typical food Colimota in Manzanillo, Colima”, and it aims to answer two research objectives; define the characteristics of the typical Colimota food to generate a standard assessment and, develop an standardized manual about Colimota typical food dishes. To achieve these objectives the inductive method and qualitative research were used, working with an instrument which was applied to a sample of the inhabitants of Manzanillo in different areas. With this instrument we identified dishes defined as typical of the Colimota gastronomy, their popularity and establishments in the city of Manzanillo that offer them. On the other hand, as part of the work of generating an evaluation standard, an Operational Matrix was used as a tool to explain and standardize the recipe processes by graphic representation of the preparation of foods and drinks identified as popular by the instrument.
