Objective:

The document reports the results of a case study whose objective was to analyze the social and family factors involved in the process of transferring traditional food knowledge within the production of tlayudas in the municipality of Tlalixtac de Cabrera, Oaxaca.

Methodology:

The study used mixed methods that included conducting semi-structured interviews and a survey of 110 producers.

Results:

It was found that the elaboration of tlayudas in the municipality has lasted over time within the framework of a localized agri-food system, in which the transfer of traditional know-how is central. This "systematization" and "location" safeguards a cultural, social and symbolic component of productive activity against external shocks that contextually affect small producers in the state.

Limitations:

There was no access to all agents participating in the value chain.

Conclusions:

The continuity of the production of tlayudas, against external shocks, that have pressed the system suggests that this activity has been reinterpreted as a cultural heritage. This is in the context of globalization, becomes a strategic resource for economic development, being the participation of the fundamental woman as a bearer of the food heritage that takes shape in a new consumption space.
